This soup features a stock made from brand-name Noto 115 shiitake mushrooms, the pride of Ishikawa. It is extremely aromatic and flavourful, thanks to the concentrated flavour of these thick-capped shiitake mushrooms, grown on natural wood in the rich forests of the Okunoto region of northern Ishikawa.
